About Dr. Kershaw
Dr. Kershaw researches practical strategies to encourage healthier and more environmentally sustainable food choices. He received a BS in food science from Brigham Young University and a PhD in food science from Purdue University. During his education, Dr. Kershaw also completed several internships in the food industry, which continues to inspire the applied nature of his research program. After completing his doctoral work, Dr. Kershaw completed post-doctoral training at Purdue University specializing in sensory science. He enjoys the challenge and excitement of interdisciplinary projects to address pressing issues facing our food system. He has eaten a peanut butter and jelly sandwich for a workday lunch for most of his adult life.
